Plenty to like about Toolangi modus operandi. Grow quality fruit and get the great winemakers of the region to craft it for you. This Shiraz made at Hoddles Creek and Coldstream Hills. Aged in French oak barriques for 18 months.

Furtive nose: Opens to baked ham, shotgun smoke, cloves, white pepper, cherries and warmed plum halves. In honour of the recent Rio Olympics, this has a lovely entry into the water, not much of a splash at all. Slides in neatly with red fruits all correct and accounted for; elegance for the shroud, rather than a bombastic fruit explosion. Soft strawberry flavours linger with the fine tannins that spread out from the linear mid-line. Deserves a delicately cooked eye fillet.
