St Matthias vineyard in the north of Tasmania is the source of the fruit. Pinot Noir and Chardonnay picked in the 1st week of March. Minimal dosage. 4 years on lees. Winemaker is Conor Van Der Reest.

Pale lemon hue with green youthful highlight. Fine bead and fast bubbles. Delicate aromas with nougat, brioche, lemon pith, green apple, chalk, sea spray and a gentle honeyed sweetness. Tight and fine palate and subtle mousse. Lingering chalky phenolics, savoury autolytic notes and piercing green apple acidity balanced with that sweet lick of honey. Fresh, clean and driving.
