5 months on fine lees before undergoing secondary fermentation and assembled using a mix of vintages. Sleekly bottled in De Bortoli’s elegant proprietary Australian made sparkling bottles. Dosage of 7g/L. Winemaker is Steve Webber.
De Bortoli, Sparkling Pinot Noir, Yarra Valley, NV

Very faint dusky blush with fine beading. Fresh and lively nose. Cherry and strawberry red fruits over pink apple, blood orange and dried petals. Creamy mousse and generous flesh through the mid palate. Dosage gives just enough smoothness to the edges of a textural and sharp cuvée. Some residual lingering pink fruits and yeasty savoury balancing tones through the finish. Serve up with your choice of protein tataki.
