De Bortoli, Nebbiolo Fizz, Yarra Valley, NV

Incredibly pale blush in hue. Plenty of fine beading bubbles. Nose of dried peel, cherry juice, egg shell, water cracker biscuit, orange zest and minerally sparkling water. Nebbiolo yet again offers power beyond what the eye expects. Textural and deeply layered. Dosage does nothing to soften firm and tight tannins that run the entire length. Intense and focused. There’s enough zip and acidity to cut through beef ragu as easily as a salumi platter.
