Cabernet does grow well in the Clare. 18 months maturation French oak, with 30% new, 30% one year old and the rest 2 to 3 year old oak.
Taylors, St Andrews, Cabernet Sauvignon, Clare Valley, 2020

Opaque and deeply coloured. Multidimensional. Cigar box, bramble, black olive, tar, studded chesterfield, blackcurrant, warm Easter bun, cassis, prune and peat. Minty and plush with a bright black fruit, sweet polish and pastille chew. Iron and ferrous tones giving a rigidity and seriousness, with licks of oak char and spice. The quality of fruit is undeniable with a smooth flow that belies the seriousness of the structure. Ready now or in 15 years time.
