Pale gold, still with a green highlight. A dance of freshness and development: Honeysuckle, beeswax, French Toast, jasmine, nashi pear, preserved lemon, lime juice and wet stones. The palate still holding vibrancy and life while growing into richer later life: toast, wax and ‘parmesan’ rind. Acidity leaving a juicy feeling through the long citrussy finish, redolent of grapefruit bittersweetness.
