Gundog Estate Indomitus Albus Semillon 2024

Matt Burton from Gundog Estate has created the Indomitus range as a challenge to the norms of winemaking for Semillon and Shiraz. He sticks with the 100% Semillon again for this release.
Fruit from Hollydene Estate in the Upper Hunter and Tinkler’s Mount Bright and School Block vineyards in the heart of the Hunter Valley. Same winemaking as the 2023: complexity developed through natural fermentation of cloudy juice in tank and barrel, with a portion of the wine held on skins for 175 days extended maceration.

Clear and pale lemon with green highlights. Pea sprouts, lemon thyme, lemon verbena, lime sorbet, vanilla cream, crushed almonds and apple leaf. Tight and textural. The body built up by that time on lees and skins, yet the palate remains intense and piercing. No need to rush this one, it will age very slowly
