A change in fruit again for this year’s release of Matt Burton’s Indomitus Rosa: 100% Sangiovese from the Moppity vineyard in the Hilltops region of NSW. 12 hours skin contact before pressing off. Natural ferment in both barrels and tanks. Each parcel left on lees for more than 6 months.

Pale strawberry in colour. Summer fruit cup aromas: strawberries, watermelon, cherries, raspberries with a little buttery leesy nuance. It’s not a sweet fruit cordial or syrup though, there’s crushed kitchen herbs and a little sesame oil giving savoury gilding. Textural and layered, there’s some serious intensity to the fruit with regional acidity providing some puckering through the tail. Enjoy cool, but not too cold else those aromatic fruit flavours will be closed off. Delicious stuff,
