De Bortoli, Lemon and Lime Spritz, Riverina, NV

Tennis ball yellow/green in colour. Potent nose, squeezed lemon and lime, with green apple slices, preserved lemon, candied lime peel and a little vanilla crème: Like if someone blitzed a Lemon/Lime Splice™. Obviously highly carbonated and with a rough mousse, at first the easy nature appears simple, but the deeply intense and bitter citrus of this prevents it from being a ‘hard’ lemonade and offers a little ‘adult’ perspective. Serve over-ice and in a tall glass (maybe even cut it back with some soda) and you’re on a hot day winner.
