Gundog Estate Indomitus Albus Semillon 2025

Matt Burton employs the same winemaking as the 2024:  100% Semillon fruit from Hollydene Estate in the Upper Hunter, Brycefield and Tinkler’s School Block vineyards in the heart of the Hunter Valley. Complexity developed through natural fermentation of cloudy juice in tank and barrel, with a portion of the wine held on skins for 175 days extended maceration.

Very pale hue with green highlights. Lemongrass, lemon verbena, pea sprouts, bitter yellow melon, Golden Delicious apple, elderflower, malt and a touch of cashew cream from the extended lees contact. There’s just a touch of residual sugar which, along with the lees contact rounds the edges and provides a textural pathway for lemony citrus and appley fruit flesh. Juicy acidity of trademark Hunter youth.
