A change in fruit again for this year’s release of Matt Burton’s Indomitus Rosa: 100% Sangiovese from the esteemed Freeman vineyard in the Hilltops region of NSW. 12 hours skin contact before pressing off. Natural ferment in seasoned barrels. Matured on lees for more than 6 months.
Gundog Estate, Indomitus Rosa, Sangiovese, Hilltops, 2025
Pale salon to cerise in colour. Dried strawberry, tobacco, watermelon, charred lime, red apple skin, caramel, rosewater, vanilla bean, blood orange and an inherent varietal earthiness. The aromatics carry through to the palate, emboldened and textured with winemaking and a little residual sugar. Again, those aromatics are delicious so don’t serve too cold.
