A whippet is probably a decent zoomorphic representation for Sauvignon Blanc. If zoomorphic can be used to describe wine.
Longview, Whippet, Sauvignon Blanc, Adelaide Hills, 2016
Even though it has all the markers of “usual” SB, it is not an unattractive nose: light passionfruit, fresh asparagus and grass, but subtle without being pungent. Light tropicals before passionfruit pulp and refreshing, not cutting acidity. Finishes steely and tight, almost Riesling like. Certainly one of the better examples of the variety.
