Light gold, with a tiny green hue. Not a shadow of blush in sight. Hyper perfumed pear spectrum: fruit (fresh and tinned), blossom and sorbet. This is bright and happy and full of life: like Spring growth itself. There’s pear flesh, little soaps, a little spice and beautiful phenolic structure that doesn’t fall over itself or feel fat. As Neil says, match it with pork of some kind.
