I’ll leave it to Neil Prentice, wine maker and proprietor of Holly’s Garden and Moondarra to introduce this wine: “Whilst it sounds pretty, don’t be fooled. Channel Lord Of The Flies, kill the pig and glug Gris. Nothing better, or more primal.”
Holly’s Garden, Pinot Gris, Whitlands, 2015
Light gold, with a tiny green hue. Not a shadow of blush in sight. Hyper perfumed pear spectrum: fruit (fresh and tinned), blossom and sorbet. This is bright and happy and full of life: like Spring growth itself. There’s pear flesh, little soaps, a little spice and beautiful phenolic structure that doesn’t fall over itself or feel fat. As Neil says, match it with pork of some kind.
