Fermented on skins for 7 days. The colour recalls little baby eschalot skin. Fragrant and perfumed. Sweetish Toffee (praline kind), pear skins/juice, cool copper with a little bit of funk. Boom. Mouth filling texture, tongue clacking acidity and plenty of flavour: think subtle stone fruit and pear. Buy this. Drink this.
