3 months lees contact during wine making to try and make a point of difference. Pungent gooseberry, herbaceous blackcurrant leaf, struck match funk, passion fruit pulp and creme anglaise. The lees contact provides noticeable texture before varietal light tropical fruit and passion fruit seeds/pulp. A step above many of the insipid offerings from the region.
