Acidity keeps things fresh while there’s a silky glycerol finish that belies the alcohol content an underlying bluestone gravelly quality gives a ruggedness to the smooth charm. Serve slightly chilled with char siu pork or a bbq sauce bacon sandwich or roast turkey/ham or go the other end of the meal to serve with a rich chocolate dessert.
