The big daddy of Chardonnay from McLaren Vale’s Serafino. Racked into 300l oak barrels and wild fermentation. Partial malolactic fermentation and plenty of lees stirring whilst in oak. Charles Whish is the winemaker.

Rich and ripe aromas of nougat, spice, cumquat, vanilla bean, preserved lemon, orange skin and macadamia nut. No holds barred. This one bites deep with ripe Meyer lemon citrus, spicy smoky oak, creamy lees influence and a minerally tail. Has breadth, depth and muscularity enough to spend plenty of time in the cellar. Will easily match bigger roasted white meat dishes.
