From a single vineyard, 100% hand picked with 50% destemmed, 50% whole bunch pressed. Wild ferment in French oak barriques (20% new and 80% older). Barrel maturation on lees for nine months. 100% malolactic fermentation. Lyon’s Will is a wife and husband team of Oliver Rapson and Renata Morello, with Oliver being responsible for this release. 2023 will go down as being the latest pick on record.

Pale lemon/straw in hue. Attractive aromas: spiced apple pie, grapefruit flesh, rich lemon curd, light salted caramel hints, lemon shortbread, sesame oil and soft oak and floral nuances. Fleshy, yet focused. Intense textural feel from barrel and lees work through the mid palate then cut with the sharp tail of acidity. A wine with a classy structure with savoury, flinty edges.
