Clem is a white grape field blend, but so much more than a sum of all parts: Pinot Gris, Pinot Blanc, Gewürztraminer, Chardonnay Musqué, Riesling and Grüner Veltliner. Up to 7 days of skin contact before pressing off. Grapes are naturally co-fermented before 9 months maturation in large format oak (foudré) on full lees. The wine sees 100% malolactic fermentation to add even further depth.

Carrying the merest hint of onion bronze blush. The Chardonnay Musque and Gewürztraminer throw plush rosewater and musk florals underneath pomme fruit (pear and apple), honeycomb and beeswax, savoury brown spices, toasted sesame seeds, sea spray and roasted nuts. A flowing and creamy palate is studded with spice and earthy, savoury tones. Tight and sharp through the close with an echo of vanilla bean paste/burnt butter sauce. Unique interplay and utterly delicious.
