Destemmed fruit and naturally fermented for 3 weeks (100% whole berries), pressed off and matured in French oak barriques (20% new) on full lees for 12 months. Blended and sent to tank for 5 further months maturation.
Sinapius, Pinot Noir, Pipers River, Tasmania, 2023
Medium garnet. Calm and spiced. Blood orange spikes over deep cherry, rhubarb, rose petals, milk chocolate buttons, just brushed kitchen herb flowers and some forest floor earthiness. Fleshy berries, front and mid palate before smoky savoury, forest floor takes over like a creeping fog. Gunflint, graphite and steely tang to a smoked meaty depth before drawing tight. Fine and tensile tannins. Length. Superb.
