Y Series, Lighter, Cuvée, South Australia, NV

Pale lemon/straw with a green highlight. Small galaxy of fast and tight bubbles. Soft white flowers and just torn brioche, lime and lemon citrus, chalk and sweet nougat. Somewhat reminding me of a liquid fairy floss with a sweet mousse. There’s apple and lemon with a soft chalky edge, but the residual sugars and reduced alcohol make this a soft and bubbly thing through the mid palate. There’s still a sinew of bright acidity cleaning up and tightening up the (very short) finish. Great choice for day time drinking for late summer Thai salad lunches.
