Y Series, Prosecco, South Australia,NV

Very pale lemon/green Very fine lacing and plenty of fast bubbles. Green and pink apple skin, green grape, creamy vanilla ice cream, kitchen herb fronds, green mango flesh and a little hard Parmesan crust yeasty/savoury edge. Hyper clean and fine. Easy citrus and green apple flesh. It’s tough for Prosecco to shine to any great heights (yes, there are some very good examples) but there’s obvious quality and care taken with this release. A little chalky texture with the mid palate and tail rounded out with that small amount of residual sugar, sharpened up with plenty of acidity.
