Rewild, Prosecco, Murray Darling, 2025

Plenty of excited bubbles from the pressured winemaking. Aromas of sherbet, ‘wizz fizz,’ Granny Smith/green apple, preserved lime and green grape. Blousy mousse with plenty of powdery green apple and a little sweet musk. Intense acidity with a short, lemon/lime citrus finish. Heading towards confectionary land and without complexity, but still clean.
