It’s logical to think biologically, right? Anyways, this is as simple as winemaking can get for reds: ‘partially crushed and left in stainless steel tanks for 10 days before bottling. No added preservatives – just a small amount of Co2 for protection.’ It’s preservative free, organic, vegan and biodynamic. David Lowe is a big believer in looking after the planet. You’ll need a corkscrew to open it.

Deep purple with crimson edges. Heady with stewing plum, black tea, dried cranberry, graphite, a little licorice, some balsamic strawberries, Easter egg chocolate, fresh leather and green peppercorn. Juicy and lithe. A little soft grip from skins and not oak. Don’t serve too warm and enjoy the dark flavours and crisp cool finish. Serve with beef or goat al birria tacos.
