65% Chardonnay and 35% Pinot Noir. Lovely light stone fruit (almost peach) and blossom, with Pinot’s red fruit cherry and strawberry spectrum providing depth. The mousse is perfectly balanced. Adelaide Hills crisp apple flavours (shifting between green and pink lady) and just enough yeasty fresh white bread crust to move it above “aperitif style.” A very good addition to the stable of Adelaide Hills sparklers.
