Not a huge amount of Bubbles coming out of Mudgee…
Huntington Estate, Méthode Traditionelle, NV
Made from 60% Chardonnay and 40% Pinot Noir. Lees contact for 12 to 15 months. Lots of bubbles. Tiniest amount of onion skin blush. Smells of meaty red Pinot fruit, turning strawberries, grape fruit and hay bales. Starts fruit sweet with strawberry then bittersweet chardonnay fruit: tart grapefruit citrus. Even though this is Chardonnay dominant, the Pinot elbows its way to the front demanding attention. The mousse is a touch on the rough side, good acidity bites the teeth whilst some phenolic grip on the gums signals an okay food match.
