100% whole bunch. 22 days on skins and 8 months in old French oak. Unfiltered, unfined. Smells of juicy dark cherries and raspberries and musk lollies and warm doonas and winter stews and all things comfortable. Continues that dark fruit profile when you slurp it, along with a light tonic-herbal lift. But it’s not about the “palate,” it’s about the funky and smooth flavour, with a surprising amount of acidity that brightens the mood. Simply delicious.
