Nick’s take on Beaujo Nouveau. Sourced from upper Derwent & Tamar Valleys. Carbonic Maceration. The Beastie Boys were playing loud on the stereo when this fruit was in the winery, maybe that’s where it gets its funk.

The fun and funk of the carbonic signals like a Bootsy Collins bass line. Smoky cherry, touch of stalky vegetation. Palate bounces and jives: cherries & deep burnt orange/choc. Don’t mistake this for a plaything, the acid profile is spot on while the meaty finish of ham brings balance to the bright fruit front.
