Basket pressed into 100% Old French Oak. Wild ferment and 9 months maturation with bâtonnage (lees stirring). Bottled unfiltered. Vegan friendly. The label advises to mix before drinking, like a good beer.

Cloudy appearance, burnished gold. Intriguing aromas of red toffee apple, lime & mandarin citrus, salt & pepper spice, smoked almonds, marzipan and rich pot pourri. Be not fooled by the initial buttery, rich palate replete with mandarin citrus and ripping spice, there is an electric acidity that catches you off guard and strikes the teeth with precision. Echoes of smoke appear to enhance the long finish. A unique, and utterly delicious wine.
