Third release of this “wild” wine. All the love and none of the other stuff: No added sulphites, wild yeast fermentation, made from old vines and bottled unfiltered and unfined. Open fermenters and then stainless steel to settle. Bottled under DIAM cork (and a double wax seal).

Deep purple with a bright rim. Sweaty cherry, baking spices, ferrous shavings, a little meaty funk, damp fallen leaf matter, thick orange citrus bitters and a hint of earthy licorice root. Initial dark cherry flesh elegance and plush, with a surprising amount of astringent tannin before a sharp, puckering acidic citrus twang through the finish (not quite Vanilla Ice “Slice a ninja, cut like a razor blade” kind of acidity but surprising, nonetheless). Serve up to loaded fries.
