This is where the Gundog team like to have a little fun: Indigenous yeasts, some parcels clean fermented in tank (and retaining a little sugar to have the final wine sitting at 9gms/l making it just off-dry), other parcels kept cloudy in barrel ferments and 30% of the fruit parcels with time on skins. Blending the parcels (that come from different vineyards with the different winemaking techniques) becomes the real art here. Made in a ‘vegan friendly’ way.

Pale lemon colour with green highlights. Lemon butter, Brazil nuts, lemongrass, lime pith, water cracker, mineral water and a hint of double cream. Carries the richness well. Minerally and sandy texture under bright and intense acidity with the residual lemon/barley drop sweetness. Well executed and made for food.
