Pale lemon-gold hue with green highlights. Goodness, I don’t want to phone this one in, but that sea spray/oyster shell and green apple tone, easy brioche and just ripe strawberry is redolent of this reliable label. A sprinkle of cinnamon and native honey sweetness with just roasted nuts and grapefruit pith. Fine and focused mousse with brisk sea spray freshness. Hints of earthy truffle and nougat layers intertwine with sweet/yeasty brioche. The tail offers a little chalky grip with signature piercing acidity driving long. If there’s any criticism at all, it’s just missing a little oomph through the tail, but that will fill out with a little age (if you can wait).
