Mitchell Harris Sabre Sparkling 2014

The Mitchell Harris flagship. This vintage sees the mix as 85% Chardonnay and 15% Pinot Noir and the alcohol dropped a little. Fruit sourced from the Macedon and Pyrenees ranges. “Methode Traditionelle,” and 39 months on yeast lees. Dosage of 4g/L of sugar to keep things fresh and crisp.

Micro-bead with a fast paced reach for the surface. Chardonnay dominance proven on the nose with peach and lemon fruit, complex hints of marzipan and nutty lees-derived aromas. Delicate mousse on the palate with a fine, tight nature. Refined citrus flavours sit high and last long. Not as rich as previous vintages, more in an apertif style but has the potential for development with appropriate maturation.
