Botrytis is a rot, a fungus, not usually welcome in vineyards but when managed properly, can create some of the most celebrated wines in the world. Here Singlefile have taken Chardonnay and Gewurztraminer affected by the fungus to build a sweet wine of power and depth.

Fragrant white rose, mandarin skin, lime sorbet, rose water and Turkish delight characters with bortrytis notes of apricot slices. A sweet palate, almost luscious as the natural acidity keeps it from tipping into unctuous. Smoky lime and mandarin citrus with Turkish delight squares and apricot stonefruit cruise through the palate. Serve with a chilli hot green/jungle chicken curry or a key lime tart as a dessert option.
