The 2017 of this took home the Trophy for best Cabernet at the Sydney Royal Wine Show, yet this vintage sees a change to the fruit source to the greater Adelaide region, encompassing a large swathe of vineyard area in South Australia, including Mount Lofty Ranges, Fleurieu and the Barossa.
Chapel Hill, The Parson, Cabernet Sauvignon, Adelaide, 2018
Gives plenty of the money. Dark chocolate: a hint of Rum n’ Raisin, black olive, savoury leaf, tar and leather, varietal cassis with a dry cereal note emphasising the seriousness. Medium bodied and elegant. A modern Cabernet with knotty tannins that keep all roped in. Dark black berry, blistered grilled capsicum and slick oak treatment giving a nutty coda to the brooding palate. Offers plenty for the dollars and ready for now.
