After fermentation, the wine spends 24 months in a combination of two and three year old American oak barrels, then 9 months in stainless steel tanks before bottling.
Tim Adams, Shiraz, Clare Valley, 2019
Inky purple hue. Dark berry fruit melange: With mint and crushed ant providing some regionality over plenty of sweet biscuity oak. There is classy dark fruit that’s veiled under the cloak of oak for the moment. Dark chocolate, vanilla and a chary edge, freshened with bright red fruits and sharp cool climate cut. Plenty of time for this to open up.
