Winemaking like a jigsaw: Some small batches underwent wild fermentation and others were inoculated. 8% up to 14 days of carbonic maceration before being destemmed and then dumped into open fermenters for wild fermentation. French oak barriques (17% new) for malo-lactic fermentation and 11 months maturation. The picture becomes complete: Fresh, pulpy shiraz berry aromas with layers of liquorice, just-ground black & pink peppercorns and judicious smooth oak spice. Juicy, bright acidity with impeccable balance, fine silty tannins and finish of bitter espresso. Elegant and classy modern Australian shiraz.
