A fine bead, with tight, persistent bubbles. Lively aromas with plenty of fresh green apple skin, green grape, waxy hints of marzipan, subtle chamomile and a lingering fresh lemon/lime citrus, like you’ve just cleaned the kitchen. No car park pre-loading alco-pop here: starting out with a creamy mousse, the texture builds then folds in tight, resulting in a dry, focused finish. Match the simplicity and rawness together with a plate of sushi or antipasti crudo meats/veg.
