Deliberately made without oak maturation and can even handle a chill. Light, woody herbs with red currants and berries, fresh moist earth qualities and cool tang. Pure medium-light fruit expression with only those tannins giving gentle tease and grip rather than chunky, blocky wood derived items. Herby, spicy, easy red crunchy fruits make this is a go to pairing for all manner of foods: even those with chilli kick.
