One of a pigeon pair of sparkling Rosé, this one gets a stain, a “taché” of red wine at disgorgement to give a deeper hue than the Cuvée Rosé. This is a pre-release but the previous vintage was a blend of Chardonnay (dominant), Pinots Noir and Meunier and sourced from Victoria and Tasmania. Traditional Method of fermentation(s).

Light cerise with fine bead. Warming strawberry jus, chalk, strawberries n’ cream, white bread crust, vanilla ice cream, baked ham, mushroom fin, quartz and light pawpaw. Expansive mousse that blooms well before showing richness and creamy fullness through the front- mid palate and tapering to a fine, chalky finish. Red fruits abound and showing plenty of life. Serve with smoked salmon blinis or tuna ceviche as a starter.
