Full nose with thick pear flesh, ground salt crystals, “Parmesan” rind, lemon chunks, steel and white root vegetables. Medium bodied with a cotton sheet like texture, keen spice and plenty of dry, savoury personality. Cool vintage night crisp acidity comes as a coda. A textural surprise packet.
