Not enough Gamay is consumed in Australia. When done right, it presents a a fine wine on its own, not some “poor Pinot Noir cousin.” Fruit from De Borts’ Estate Vineyard in Dixons Creek. This has 30% whole bunches in the ferment, nearly 3 weeks maceration in open fermenters before being pressed off into large French oak for maturation.

Soft velvety cherry and undergrowth with attractive stalky, old mint spice and the right amount of ferrous meaty charcuterie. Brightly fruited with macerated strawberry and cherry on a lithe, flowing palate with easy, grippy tannins. Inherent drinkability.
