I’ve a soft spot for the Cabernet that comes from the De Borts’ Estate Vineyard in Dixons Creek. The wines are usually such a soft, classic expression and completely enjoyable.

Unadulterated Mod Oz Cabernet frame and mode: Blackberry and easy blackcurrant: Light 2B Pencil outer, attractive cedar and chocolatey oak. Higher tones of mint over earthy peat. Firm elegant tannins proving a base for the mid-weight supple dark fruit. Good persistence of flavour through a calm finish.
