Pale to just medium lemon-yellow hue. Meaty depth with Parmesan rind and soft doughy bun over preserved lemon, grilled lemon flesh and iris blossom. Leaning towards mid weight, the softly waxy texture builds nicely under bittersweet grapefruit and lemon citrus. Fresh and clean through the finish.
