Terre à Terre Crayères Vineyard Sauvignon Blanc 2021

The Bizots put a lot of care and attention into making their flagship Sauvignon Blanc. The juice spends three weeks cold-settling in a stainless-steel tank before being fermented in eight old 600L French oak demi-muids. Then aged in the demi-muids for eight months on full lees with no bâtonnage (lees stirring). Then transferred to stainless steel for a settling month before being bottled. A big step down in alcohol from the 2020.

Pale lemon gold in colour. Sandy yet earthy with white florals, passionfruit skin, lime zest, kaffir lime leaf powder, almond husk, smoked cream, white stone fruit skin and a stony (minerally?) freshness. Precision and balance. The structural components give such a compelling framework for the laser focused fruit. Depth and richness from the lees work keep this wine head and shoulders above so many other SBs. The finish is all class and leaves with a desire for more.
