DAOSA (Dedicated Artisans of South Australia) is the sparkling arm of Terre à Terre wines: Xavier Bizot and Lucy Croser. Wine making same as previous vintages: Cold settled juice in tank for two months before transfer to two 600L old oak barrels for primary and then malolactic fermentation for 8 months. Secondary fermentation in bottle and further aged on lees for 42 months with a low dosage (5g/L) at time of disgorgement.

Very pale lemon hue. Fragrant and floral. Lemon zest freshness with white flowers, plenty of gun flint, some creamy Jersey caramel-esque notes from the MLF, roasted almonds and a little sliced green apple. Textural and focused with exquisite length. Bright citrus with a ripe peach slice nuance cut with a briny friskiness. Delicacy with a solid framework and continues the legacy of DAOSA being one of the top sparkling marques.
