The Bizots put a lot of care and attention into making their flagship Sauvignon Blanc. 57% whole bunches pressed into old French oak barrels for fermentation (the rest into stainless steel). No malolactic fermentation. 8 months maturation before blending and bottling.

Complex and profound. Almond husk, touches of sherry-like nutty oxidation, gooseberry, pineapple marmalade, vanilla crème, just lit campfire smoke, honeycomb, brown pear, smoked ham hock, jalapeño pepper and green tomato leaf. A layered, complex and structured palate yet remaining focused and tight. Lemon, passionfruit, gooseberry and tropical fruits squeeze their way through a textured, nutty frame. Acidity is sharp, like an accidental knife cut you don’t feel until the blood starts. Unique, powerful and well priced.
