The Bizots put a lot of care and attention into making SB. This sees a late harvest of 60% ‘clean,’ 35% shrivelled and 5% Botrytis affected grapes. Fermentation in tank to keep things pristine. Most wineries pump their sweet wine out cheap
Terre à Terre, Crayères Vineyard, Late Harvest, Sauvignon Blanc, Wrattonbully, 2024
Pale hue. Soft hessian, yellow apple flesh, apricot flesh, sherbet, gooseberry, pickled jalapeño, lime, box hedge and white stones. Just viscous and slippery in texture showing those natural remaining sugars. Flavours of gooseberry, lime, green apple, pear, ‘lemonade’ and a touch of apricot flesh, but don’t think this is just ‘breakfast juice.’ There’s crisp acidity that runs like steel tendrils along with a ‘minerality’ that ensures wonderful balance and freshness. A juicy and long finish that shows just how good a well made off-dry wine can be.
