DAOSA Late Disgorged Blanc de Blancs 2017

DAOSA (Dedicated Artisans of South Australia) is the sparkling arm of Terre à Terre wines: Xavier Bizot and Lucy Croser. Winemaking sees the DAOSA signature: hole bunch pressed, cold settled in tank for two months before racked into old 600L barrels for primary fermentation. 8 months maturation in barrel, with some lees stirring to go through malolactic fermentation. Tiraged on 31st of January 2018 and then aged for 90 months in bottle before being disgorged on 5th of June 2025 with a dosage of 4g/L

DAOSA, Blanc de Blancs, Late Disgorged, Chardonnay, Piccadilly Valley, 2017

Pale straw hue. Still carrying primary features. Saline, soft brown spice, rock salt, musk, pink grapefruit, buttery pastry, soft wet sand, lemon drops and herbal lilt of fennel/anise. Hints of honeysuckle and a whisper of development with apple pie, almond brioche and roast chicken skin. Layered and powerful: Maintains a dominant presence with plenty of focus and precision. If there’s any complaint, there’s just ever so slightly a coarser finish to this aged release over its 2021 sibling, yet that quibble is definitively minor in comparison to the complexity.
